the grapes are destemmed, and the berries are gently crushed. For fermentation, musts are used that are obtained through both the 'saignée' method of gravitational separation and pneumatic pressing. Skin maceration is carried out at 12-13°C for 1-2 hrs, followed by settling at 5°C for 24 hrs. Fermentation takes place in 100 Hl stainless steels tanks a controlled temperature of 16-18°C for 12-15 days. The wines is matured on fine lees deposits.
