The optimal harvest time and qualitative selection aim to express the fruit nuances characteristic of full maturity. The grapes are destemmed, and the berries are lightly crushed. The winemaking technique used uses the 'saignée' method of gravitational separation of the rosé must, with pellicular maceration taking place at 14-15°C for 2 hrs (Merlot)and 4 hrs (Cabernet Sauvignon). Decantation followed by cold storage for 7-10 days at about 10°C of the must is continued by its fermentation at a controlled temperature of 18-20°C in 100 Hl stainless steel tanks for 15-18 days. Maturation for 5 months in stainless steel tanks on fine lees.
